Cup day pudding making

Melbourne cup day is the day my family get together to make our Christmas puddings and cakes. My brother opted out a while ago- he prefers his ex girlfriend’s mum’s recipe. Mr grubby never comes- he has always got work to catch up on. And dad is round about, but usually looks after the baby or toddler. So that leaves me, mum, sis and now H. An intergenerational girl-thing. We make my Nain’s awesome pudding recipe, and until two years ago, she made it with us. Now we just think of her, patiently peeling blanched almonds for us.

Nain’s plum pudding.
250g butter
1 1/3 cups brown sugar
1 tbsp treacle
4 eggs
1 tsp each grated orange and lemon rind
1 medium carrot, grated
1 small apple, grated
750 gm mixed dried fruit
1 1/2 cups flour
125 gm breadcrumbs
60gm chopped blanched almonds
1/2 tsp bicarb soda
3 tbsp brandy
Cream together butter, sugar and treacle. Add eggs, one at a time (unbeaten) Mix well. Add rind, carrot, apple and fruit. Mix in. Add flour, soda and breadcrumbs, folding in. Add brandy and almonds. Mix well together. Allow to stand for half an hour. Put into a greased pudding basin (actually it is usually enough for 2). Cover and boil rapidly for five hours. (maybe three for 2 medium sized puds) Boil for a further 2 hours on the day of serving.
